Given my open ended question, My feelings is that the depth of field for f/8 on a APS-C is the same as f/8 on 35mm sensor. The reason I give for this is that a wide angle lens on 35mm has the same depth of field as a telephoto lens on 35mm when the wide angle image is blown up to the same size as the telephoto print.
