As far as I know there's no shortcut for making a layer mask. There's a shortcut for making a layer clipped to another layer andfor duplicating a layer and for making an empty layer but it would be something new to me to hear of a shortcut for a layer mask ... That said, in PS3, 4 and 5 you can make up all your own shortcuts for everything but I don't know about doing 2 things at the same time... especially considering you'd need 2 options for the mask; transparent or opaque.
In any case it's a simple matter of clicking the icon at the bottom of the layers panel. (Ctrl+J then click the icon)
