as long as they are different logical volumes on the SAN, sure. of course that SAN will be dealing with the IO load from both servers, and the SAN itself could be a single point of failure, although a proper enterprise SAN has a rather high reliability (5-9's is not uncommon for EMC enterprise class hardware) as long as its all properly designed (redundant switches, dual HBAs in each server, etc)
