What you are about to enter is what is called a Distinguished Name or a DN.
There are quite a few fields but you can leave some blank
For some fields there will be a default value,
If you enter '.', the field will be left blank.

Since this is the req command try "prompt = no" in the req section.
Thank you, but I did get past this point. I got prompt no working and
the way it worked, just did not work well enough.
I threw the towel in on ENV and did get -subj $DN working...
