Have u check your .config for CONFIG_WATCHDOG? if its not present then select it while building kernel config file and build kernel and boot that image. For NMI watchdog check http://www.centos.org/docs/3/release-notes/as-x86/RELEASE-NOTES-U3-x86-en.html
