I am currently running the 2.4 kernel which has the following entry in
my grub.conf file (this boot correctly)

title Linux 2.4.0
root (hd0, 8)
kernel /vmlinuz-2.4.0 ro root=LABEL=/ rhgb
initrd /initrd-2.4.0.img
</grub.conf>

You need an initrd image to use root=LABEL=<whatever> method. Try
using make install instead of copying the kernel image by hand, or
read up on mkinitrd.
You're running 2.4.*0* and 2.6.*0*??
