Nope, linux-1.0.x was self hosted. Minix was only used to compile the
kernel until linux-0.10 or so.

You can run gdb on /proc/kcore, but there is no interactive debugging.
I don't remember if /proc/kcore was available in linux-1.0, though.

You'd rather start with a recent kernel. There's much more knowledge
around about 2.6.
