In my experience, Debian is usualy more stable (even unstable one).
Didn't try latest RedHat however. I also think Debian has smoother
upgrading.

RedHat ships a kernel with LOTS of additional patches, that are not in
the mainline. Debian ships a kernel with SOME additional patches.
However, which kernel you use is orthogonal to what distribution you
use. You can compile your own kernel which whatever patches suits you.

All programs work exactly the same on all distributions.  Only
difference is default configuration. After all, distribution is just
a collection of programs and a tool to ease installing/deinstalling.
