I would like to know where I can find a complet list of all the available modules like (ipt_state, iptable_nat, ipt_LOG, etc...) and what they should be used for.
You can find a list of pending/base/extra patches available from patch-o-matic on the netfilter's web site.
Here's the base repository :

I let you think by yourself how you may list other repositories.
