That is the default if your chosen vo supports the colour space of the video.

Single pictures:
-vo yuv4mpeg (for YUV input)
-vo png:z=0 (for RGB input)
video:
-vo gl supports most colour spaces.

I believe mpeg streams always contain YUV videos (but not necessarily in a
"limited range" variant).
