Thanks again Nico for those answers, making black video using that 
method does work.

When I did my test, I ctrl-c the 1 hour mp3 file, before the command 
completed, and then tested the resulting file.

Doing it for real, it seems that because the input video stream 
continues forever, that the output ts writing never completes - sits 
there working away. Any tricks to make mencoder stop writing into the 
stream once one of it's input files has no more content, or to use the 
length of the audio stream as the length of the output ?
