Masking email addresses in message text?

Folks:

Does anyone know of a way to mask email addresses that appear inside the
text of a message that is being archived?

Masking the addresses that appear in the header's is automagic, but for
privacy reasons, I would like to mask addresses that appear in the body of
a message (in signatures & stuff).
