Pretty much any of the nav apps for the tablets can save track logs,
including Maemo Mapper,  RoadMap and NavIt, plus some of the more
specialized tools like OSM2Go. The notable exception is the built-in
WayFinder Maps app - it's stable, but otherwise pretty much worthless.
