hmmm. have you tried pressing the call button (or other buttons) on the headset while a call is in progress (probably won't work, but it's all that springs to mind for me right now). The only other thing I can think of at the moment is to dig through the n800's settings, including the settings within the internet call app for an option to route audio.

According to "Device details" the N800 is connected to the headset and
the button at the bottom says "Disconnect".  Whenever I dial from the
N800, the audio still comes through the speakers.
