Newbie question: Flashing N800

That's the newest software for n800 in "fiasco" format.

That's the developer rootfs in jffs2 format (the fiasco includes a jffs2
rootfs among others).

flasher-3.0 -F fiascoimage -f

See --help for more info.

To flash, turn off the device, run the command, turn on the device.

No. You might just need to reflash it with the right file.
