This probably isn't the answer you were looking for, but...

I found that while using it, an easy way to clear the mail system's database
was to delete the account from the device. Then it removes all of the mail
associated with that account. Unless you have fancy settings, it should be
easy enough to add the account back.

Yeah, it's a hack & a workaround. But it works!

has anyone figured out how to clear the mail system?  I'd like to
start fresh, but am carrying about 10mb of mail and there's no easy
way to select all and delete - at least that I can find.
