OT - IMAP mail server with trash folder?

Hi,

Insight, our ISP, is transitioning to Time Warner. As part of this 
transition, we'll get new Email addresses. Our family has just about 
decided to switch from using our ISP's Email accounts to use accounts 
hosted on our own Linux VPS. The reason being, we should never have to 
change Email addresses again, even if our ISP changes. I'm currently 
using Sendmail for SMTP, and Dovecot for POP3 and IMAP. However, if you 
delete a message using IMAP, it's gone forever, whereas with our current 
Insight mail system, deleted messages go to a Trash folder where you can 
retrieve them. Is there a way to set this up in Dovecot, or do I need a 
different Email solution? I am already using Maildir rather than Mbox 
for server-side mail storage prior to retrieval/deletion.
