I've only tried it in a gnome-terminal window (can be started by 
pressing Alt-F2 then typing 'gnome-terminal') but may also work from a 
separate console (I guess 'orca' will work, 'ubiquity' may not as it 
needs an X display).

In the gnome terminal type 'sudo su' -- on the live CD you don't need a 
password. Type 'orca &' <return> and then 'ubiquity' <return> (leave off 
the quotes).
