In my case, emacs doesn't normally wrap lines of text unless in text-mode so I added a condition so text-mode is invoked when composing from mutt. (push '("mutt-.*" . text-mode) auto-mode-alist) (add-hook 'text-mode-hook 'auto-fill-mode) Thomas Stivers gave some excellent answers to your remaining questions.
