The utility is called pdftotext and is part of the xpdf application. It works from the command-line even though xpdf is graphical. The syntax is "pdftotext file.pdf" and you get file.txt. Often, it works out better if you type "pdftotext -raw file.pdf." This often will make more readable output. It's still pretty messy, but it's better than nothing.
