If you are looking for a complete MMC/SD boot (with u-boot itself in NAND) then it cannot be achieved on current OMAP2430. This can be achieved on OMAP2530 (I don't know the exact ES version from when this will be available) and OMAP3430 and OMAP 3530.

If you want to just boot kernel out of MMC/SD with uImage in MMC/SD- this is achievable on 2430/3430. I have added MMC/SD support in u-boot (with FATFS) for 3430, I will try to pass this source to you and probably give a u-boot update on linux.omap.com.
