Answer for a generic "I need to do this BIG work on my IMPORTANT
server" question.

The strategy I tend to use for big upgrades for servers with vital
functions is to use a replacement server while doing it, that is:

*) create a compleete full backup of your server ( or use the latest
 regular ).

*) do a compleete restore on a replacement server ( not having it
 connected. )

*) Test functionality thoroughly.

*) Do a quick switch with the network cable.

*) Now you can Upgrade without risking anything, and You also can Test
 functionality in a way you couldn't do else.

*) Last, switch back the network conections.

*) Keep the temporary replacement computer in case sotehin goes wrong,
 for a while.
