fs: improve remount,ro coherency

invalidate sb->s_bdev on remount,ro

Fixes a problem reported by "Jorge Boncompte [DTI2]" <jorge@xxxxxxxx>
who is trying to snapshot a minix filesystem image. Added comments
explain the problem.
