Linux video NLEs like kdenlive and openshot all support HD video. Not sure if they can do 5.1 audio, though, as I think that requires a proprietary codec (AC3?)

You will need to go to Blu-Ray for HD video, and sadly, there is not a lot of support yet on Linux for Blu-Ray.This link may get you started, though:--
