Although on debian you need to compile ffmpeg for x264 support, so maybe
one might as well compile it with jack?
Here's my one-liner for ffmpeg.
ffmpeg -f jack -ac 2 -i ffmpeg -f x11grab -r 30 -s 1280x800 -i :0.0
-acodec pcm_s16le -vcodec libx264 -vpre lossless_ultrafast -threads 0
output.avi
