anyone have any luck creating videos like this with open source software?

I haven't done anything quite as sophisticated as that, but I have done picture-in-picture overlays in Kdenlive. It lets you layer multiple video tracks, cropping and scaling them as appropriate, so I think it'd be possible to do this sort of thing in it. It is a little fiddly, though, so it might take a bit of effort to get it looking right.
