The only improvement I can think of do not have anything to do with Linux: Maybe you should try to place a mic directed against you acoustic guitar's saddle and/or perhaps from right above your right shoulder directed to where the hole is. Then it will be a little less finger noise, but speaking about taste: many people like to hear fingers from recorded guitars, but I think fingers will be heard anyway, but not so strong.
