through USB actual MIDI notes as a regular MIDI guitar would (eg. the
Godin MULTIAC nylon string guitars ...) enabling playing, say,
zynaddsubfx from the guitar ?

These are probably just outputting audio data (like the iAxe). These appear to your PC as an audio sound card (like a USB microphone would).

I wouldn't expect MIDI unless the vendor actually advertises it as a MIDI controller.
