I have the Roland GK pickup, and a breakout box which gives individual outputs for each string. The box is totally passive, so I don't think it would be too hard to make one. The only difficult bit would be finding one of the weird multi pin sockets that Roland use. I got about as far as a hex fuzz and some comb filters that don't track the pitch. What makes this kind of synthesis fun as opposed to pitch to midi is that it is far more expressive. The tonality of the notes and the way you play them affects the final sound.
