I'm not at home, so I can't check right now, but as far as i remember I could configure most things from this panel applet. Note though, that the user interface isn't always very intuitive. You sometimes have to use a right click to get at an context menu in obscure places. Setting the default sound card also happens via a context menu. The only thing I configured in a config file was the jack sink.
