I would suggest debian or a debian based distro like xubuntu. Xubuntu
should be light enough. It is not you can install fluxbox and have that
be your default.

I also teach and I keep track of lessons in Google Calendar. You can
sync google calendar with evolution or sunbird fairly easily. I actually
sync it with my iphone. Other than that I keep lesson files for each
student (plain text at the moment) of each student keeping track of
excused absences and their lesson plan. Later I may migrate to using xml
and make a gtk front end in c.
