There is a plugin for xinelib called xine-jack yet I did not test that on Ubuntu, I build xinelib myself with jack-support... 3.) Amarok works with the IPod (and many other player-gadgets too) if it is set to use the xine-backend it will play via jack if jack is active. Maybe you need to open xine before and choose the Jack as the audio-output before - you only need to do the latter once.
