Why not use one audio channel to feed in the piezo-signal to your soundcard 
and use an amplitude tracker with a threshold detector in software (say, SC, 
Pd and the like)?
That is probably the cheapest and quickest way to go.
You won't need to build much electronics for it (which is fun to do, but time 
consuming).
