Hi!
  Take mplayer:
mplayer -ao pcm:file=out.wav in.avi
  Works fine, generate a .wav-file in the sampling-rate (and I believe number 
of channels) of the input.
  There's also an option to skip the wav-header and just produce a raw audio 
file. Search the man for "noheader".
