Try something like JX220 vst synth. Right click on some knobs and
use the controllers to control them (from memory.. 4 years since
I used it last).

AlsaModularSynth is a nice example.

You need to get the svn version, though... If you are on a debian
based system, probably easiest to install the nightly builds
packages from:

http://www.buzzchurch.com/viewtopic.php?t=1764

There are others... pd for example, but in general, with other
software, support for controllers is not as good as it could be on
Linux (or on Windows for that matter).
