I use the Leslie simulator built into AZR3 and click the "Complex" box. You can maybe see me wiggling the modwheel on the keyboard to slow the Leslie down and speed it up. I set the "belt" to 0, because I like the sound of a Leslie taking forever to spin down. I use a little vibrato, and I have the click set to 9. I like the "2" waveform shape, it's a little closer to the flattened tonewheel sound and gives some nice harmonics. I don't use percussion unless I'm trying to do jazz.
