The demo versions of PrintMusic and Allegro 2007 (cut down versions of Finale, PM the most basic, and Allegro more full-featured) are fully functional for 30 days, after which you have limited printing and no saving. The downloads include the complete manual, so you do stand a good chance of being able to figure out how to do what you want. They can both import MIDI or MusicXML.

There have been sporadic attempts to run them under Wine, with varying success; in general MIDI input and playback has been unsuccessful, but the notation side seems to work usually.
