Google for "pic midi" and look at some of the stuff that's been done with PIC microcontrollers. The "bigger" ones have UARTs that you can use for MIDI, or you can just bit-bang the interface. I'm currently working on a simple CV/Gate sequencer based on a PIC, derived from some code I found on the net.
