That's true for all ice1712 cards, even the stereo cards like the M-Audio
Audiophile and cards by other manufacturers. The reason is the architecture of
the chip and the fact, that the ALSA driver is somehow a generic chipset driver
more than a card driver.

envy24control has an option to set up its display according to the
"real" channel count: 

$ envy24control --pleasehelpme
envy24control: unrecognized option `--pleasehelpme'
usage: envy24control [-c card#] [-D control-name] [-o num-outputs] [-i num-inputs]
        ...
        -o, --outputs   Limit number of outputs to display
        -i, --input     Limit number of inputs to display
        -s, --spdif     Limit number of spdif outputs to display

But you need to configure this on your own or just ignore the supernumerary
channels.
