A suggestion:

Try playing just a single phrase of melody against a click track. After a few
practices, start recording and continue to play. Take one of the *middle*
phrases you recorded. Rinse & repeat.

After a while you'll find you can do it with longer phrases, and (hopefully)
eventually a whole track and, especially for ambient stuff, dispense with the
click track.
