I like my Roland/Edirol UA-30.  It has "just worked" whenever I've plugged it 
into a Linux box running a 2.4 kernel.  It does also have digital in/out 
which I don't use either, but I haven't seen an analog only one for much 
cheaper.  It has a crude level meter and a level slider.
