I don't know what desktop you use, but krecord is a (very) simple
recorder with 2 types of graphic level meters. Although, all you can do
is Record, Playback and save the WAV to disk. There's no way to edit the 
  WAV once you record it. But I use it when I just want to do a quick 
recording. It also has a "Record Trigger" so You can press Record and it 
wont start recording until it hears sound. It offers different trigger 
levels for whatever job you need to do. And it allows you to choose from 
8 bit, 16 bit, Mono, Sterio and a variety of sampling rates.
