How to find these things (one possible way): com::sun::star::xml::sax::Writer::create() is defined in workdir/UnoApiHeadersTarget/offapi/normal/com/sun/star/xml/sax/Writer.hpp and shows that it creates a com.sun.star.xml.sax.Writer service. If you search for that, then 'git grep com.sun.star.xml.sax.Writer -- *.component' will lead you to that code.
