I see the LO Vanilla build is 2.2 GB vs 0.8 GB for a single language build
One needs to also take into consideration that current macOS has a file-level transparent compression in the file system. On my machine, LibreOffice Vanilla.app is (as you say) 2.2 GB nominally, but (at the moment) 760 MB on disk. So most likely the message catalogs and dictionaries that are unused would be compressed.
