As far as I know, SR-IOV is working & stable on RHEL KVM release.  We've seen IBM publish several pretty good SPECvirt_sc2010 results with SR-IOV NICs with RHEL 5.5 and RHEL6.  

For your question regarding Infiniband, I guess it's better send an inquiry to Mellanox to see if they've tested it with KVM.

for use in virtual machines.
Will it really work and go at infiniband speed?
That would be marvellous...
