Maybe forwarding delay is still enabled in bridge?
Try checking with:
cat /sys/class/net/br0/bridge/forward_delay

Not sure do you mean exactly. Prevent guest from changing it's IP or
sending packets with other IP addresses?  You can still use a bridge I
guess just add iptables rules to filter by a given IP.
