You're wanting to configure your Cups printer default settings, you can do 
this 3 ways.

1) Go into System Settings, Printer, choose the printer and configure the  
options.

2) If you have an HP printer run the HP Device Manager (hp-toolbox), select 
your printer, and configure the settings under the 'Print Settings' tab.

3) In your web browser go to http://localhost:631/ and configure Cups there.
