This is possible (or what do you want to hear ß) - we have some installations 
where the mail spool is mounted by NFS and even the performance is OK as long 
as the underlying network is fast enough (bandwidth/latencies).

Not shure how far NFS caching cloud improve here (on the cost of which 
reliability in case i.e. of a crash or similiar) - we never used that 
ntil2day.
