For a different approach - we use sync_client and some hacked together config directory to replicate all their email as close as possible to up-to-date, then lock down all incoming connections and run it again. Finally, we check that all the data got there OK (we have a tool for comparing two copies via IMAP) and then update the delivery paths and proxies and up them come again. Any sort of rename where they get presented with their folders slowly disappearing sounds fraught with confusion to me! (renaming of INBOX is special in lots of ways) That said, no comments on the general merits of your approach.
