Two things:1) I agree it's a pain. But in Thunderbird there is Edit --> Reflow which helps a lot. It's not perfect, but it makes the pain bearable.
2) You too are guilty. Your email was not flowed and with very long lines (not infinite like Apple, but still way more than 80 characters).
